Red Kidney Bean Salad
Looking for a simple yet satisfying side dish or light meal? This Red kidney bean salad hits all the right notes.
Ingredients
- 1 Can of Natura Bella Red kidney beans (400g)
- 1 Cup of chopped cherry tomatoes
- 1 Cup of Lora pitted green olivesΒ and FOS Kalamata pitted olivesΒ
- 2 Boiled eggs
- 50g of Fior Di Vita Greek Feta cheeseΒ
- 1/3 Cup of chopped pickles
- 2 Tbsps of spring onions
- 2 Tbsp of Golden Drop Extra Virgin Olive Oil
- Fresh dill
- Natura Bella Lime juiceΒ
Preparation:
Method
- In a bowl add beans, tomatoes, olives, onions, pickles, olive oil, lime juice, fresh dill, salt and pepper. Mix well.
- Add the feta. Mix again.
- Transfer the salad over a serving bowl and add the boiled eggs.
