Coconut & White Chocolate Cheesecake
Ingredients
Base
- 10 digestive cookies
- 1/2 cup of oats
- 1/2 cup of shredded coconut
- 100g of melted unsalted butter
Filling
- 400 g of Kolios Cream Cheese
- 150g Kolios Greek Yogurt
- 1 1/2 tsps of vanilla extract
- 1/2 cup of shredded coconut
- 3 tbsp of maple syrup
- 100 g of white chocolate
Toppings
- Toasted Coconut chips
- White Chocolate
Preparation:
Method
- In a food processor or blender add the cookies, oats and coconut. Blend for a few seconds.
- Add the melted butter and mix. transfer the mixture into a tray and press firmly into the bottom. Refrigerate.
- In a bowl add the cream cheese, Greek yogurt, vanilla and syrup. Mix everything with an electric mixer until smooth. Add the coconut and white chocolate and mix.
- Remove the crust mixture from the fridge and transfer the cream cheese filling into the crust.
- Add Melted white chocolate on top and coconut chips around the edge
