Tuna Meatballs
Ingredients
Tuna Meatballs:
- 350g of Redelmar Tuna Chunks
- 2 eggs
- 1/2 cup of bread crumbs
- 2 tbsp of spring onions
- 2 tbsp of fresh parsley
- 70g of feta cheese
- 1 tsp of garlic powder and dried oregano
- Olive oil
Tomato Sauce:
- 2 cups of cherry tomatoes
- Small onion
- Garlic powder
- 1 tsp Fresh parsley
- Olive oil
Preparation:
Method
- Β In a bowl add the tuna, eggs, breadcrumbs, spring onions , garlic powder, oregano and pepper. (Do not add salt) mix well
- Β Add the feta mix again.
- On a baking sheet add 2 tbsp of olive oil.
- With a spoon or a small measuring cup scoop in a bit of tuna mixture and shape them into balls.
- Bake for 15 minutes on 200C flip them and bake for 10 more minutes.
- While the tuna meatballs are baking prepare the tomato sauce.
- In a pan add olive oil and onions.
- Add the cherry tomatoes and let it simmer for a few minutes. Add 3 tbsps of water and mix.
- Add garlic powder ,parsley, salt and pepper.
- Add the meatballs in the sauce and serve.
