Chocolate Chickpea Cookies

Try this delightful twist on a classic treat. These aren’t your average chocolate cookies; they’re secretly packed with goodness thanks to Natura Bella’s Chickpeas!

Ingredients

  • 1 Can of Natura Bella Chickpeas (400g)
  • 1/3 Cup of coconut sugar or brown sugar
  • 1/2 Cup of cacao powder
  • 1 tsp of Vanilla extract
  • 1/2 Cup of coconut
  • 1/4 Cup of peanut butter
  • 1 Egg
  • Melted dark chocolate (optional)

 

Preparation:

Method

  1. In a food processor or blender, mix Natura Bella chickpeas, sugar, cacao powder, vanilla, coconut, peanut butter, and egg.
  2. Process until a smooth dough forms and there are no chickpea chunks.
  3. Form into balls and pace them on a baking tray.
  4. With a fork, gently flatten each dough ball and make an x mark. if it’s too sticky, wet the fork with water.
  5. Bake for 15 minutes at 200°c
  6. Once the cookies are completely cooled, dip half in melted dark chocolate.
