Butter Bean & Vegetable Soup
Feel like a warm hug in a bowl? This homemade recipe for butter bean soup is all about simple goodness!
Ingredients
- 1 Can of Natura Bella Butter Beans
- 1 Celery Stick Chopped into Small Pieces
- 1 Large Carrot Chopped into Small Pieces
- Handful Of Spinach
- 1 Medium Sized Onion Chopped
- 1 Tbsp of Worcestershire Sauce
- 1/3 Cup of Shredded Parmesan
- Natura Bella Lemon Juice
- 1 Tsp of Garlic Powder And 1 Tsp of Rosemary
- 2 Cups of Vegetable Broth and 1 Cup of Water
- 1 Tbsp of Golden Drop Extra Virgin Olive Oil
- Salt And Pepper
Preparation:
Method
- In a medium pot, add olive oil, onions, carrots, and celery. SautΓ© the vegetables for about 5 minutes or until softened.
- Add the vegetable broth and herbs. Once the soup starts boiling, add the beans, sauce, salt, and pepper. Turn the heat to low and let it simmer for about 20 to 25 minutes.
- Add a cup of soup to the blender, and blend until this portion of soup is liquid
- Add this liquid back to the pot and stir.
- Add the cheese and spinach, a cup of water, and lemon juice
- Cook for 15 more minutes and serve with fresh parsley on top and olive oil drizzle.
