Creamy potato leek soup with pancetta
Warm up with this hearty and satisfying potato leek soup.
Ingredients
- 1 large leek thinly sliced
- 3 medium size potatoes chopped into cubes
- 150 g of Fior Di Vita Pancetta Dolce (more for topping optional)
- 3 garlic cloves
- 1 vegetable stock cube
- Fresh parsley
- 4 cups of water
- Fior Di Vita Shredded cheddar cheese
- Pepper
- Golden Drop Extra Virgin Olive oil
Preparation:
Method
1. Place a large pot on a medium heat , add olive oil, leeks and pancetta. Cook for five minutes stirring occasionally.
2. Add the potatoes, garlic, 2 cups of water, salt and pepper.
3. Cook for 20 minutes or until the potatoes are tender.
4. Add 2 more cup of water, the vegetable stock cube and fresh parsley. Cook for 15 minutes more.
5. Before blending the soup taste for salt.
6. After blending the soup add the cheddar cheese and stir until it melts.
7. Fry extra pancetta for topping, add olive oil and fresh parsley.
