Healthy Banana Bread Recipe using Kolios Hercules High Protein Greek Yogurt

Ingredients:
  • 1/4 cup Kolios Hercules Greek Yogurt
  • 3 Bananas
  • 2 eggs
  • 1/2 cup Golden Drop Extra Virgin Olive Oil
  • 1/3 cup Honey
  • 1 tsp Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1/2 cup Walnuts & Raisins
  • 1 3/4 cup Oats
  • Butter

Frosting

  • 1/2 cup Kolios Hercules Greek Yogurt
  • 1/4 cup Maple Syrup
  • 1/2 tsp Ground Cinnamon
  • Crushed walnuts

Preparation:
  1. Preheat oven to 160°C.
  2. In a large bowl, mash the bananas. Add Kolios Hercules Greek Yogurt, eggs, olive oil, honey, vanilla extract, cinnamon, salt, walnuts, raisins, and oats. Mix well.
  3. Coat a loaf pan with melted butter. Scrape the batter into the pan and smooth with a spatula.
  4. Bake for 50 – 60 minutes. Banana bread is done when a toothpick inserted in the center comes out clean or with a few crumbs attached.
Directions – For the Frosting:
  1. In a medium bowl, combine Kolios Hercules Greek Yogurt, maple syrup, and cinnamon. Whisk together until smooth.
  2. With a spatula, spread the frosting over the top of the banana bread. Top it off with a sprinkle of crushed walnuts.
