Zucchini Fritters Recipe with Fior Di Vita Greek Manouri Cheese

Ingredients:
- 150g Fior Di Vita Greek Manouri
- 3 coarsely grated zucchini
- 100g shallots (finely chopped)
- 2 garlic cloves (crushed)
- 60g self raising flour
- 2 eggs (lightly beaten)
- 2 1/2 tsp. ground coriander
- 1 1/2 tsp. + 1/2 tsp. ground cardamom
- 150ml sunflower oil
- Salt & Black pepper
- 200ml sour cream
- 5g coriander (roughly chopped)
- Zest of 2 limes + zest & juice of 1 lime

Preparation:
For the Sauce:
– Mix together sour cream, coriander, ground cardamom, zest and juice of lime, 1/4 teaspoon salt, and a grind of pepper. Set aside in the fridge until ready to serve.
For the Fritters:
- Place the grated zucchini in a colander and sprinkle with 1 teaspoon salt. Set aside for 10 minutes, then squeeze them to remove most of the liquid (don’t squeeze them completely dry).
- Transfer to a large bowl and add the shallots, garlic, lime zest, flour, eggs, ground coriander, cardamom and a grind of black pepper. Mix well to form a uniform batter, then gently fold in roughly chopped Fior Di Vita Greek Manouri Cheese (1-2cm chunks).
- Pour enough oil into a large frying pan so it rises 2–3mm up the sides and place on a medium heat. Once hot, add 4 separate heaped tablespoons of mixture to the pan, spacing them well apart and flattening each fritter slightly as they cook.
- Cook for 6 minutes, turning once halfway through, until golden and crisp on both sides. Transfer to a kitchen paper-lined plate and keep somewhere warm while you continue with the remaining two batches.
- Serve with a bowl of the sauce on the side.
