Greek Gyro Pita Recipe using FOS Greek Kalamata Olives

For the meatballs:
- 1/3 cup FOS Kalamata olives, chopped
- 450g ground lamb
- 1/4 cup almond flour
- 1 egg
- 1/3 cup red onion
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1/2 teaspoon thyme
- 1 teaspoon oregano
- 1/2 teaspoon cumin
- 2 tablespoons fresh dill
For the pitas:
- Pita breads
- Tzatziki sauce
- 2 cups romaine, chopped
- 1/4 cup tomatoes
- 1/4 cup red onions
- 1/4 cup cucumber

Preparation:
- Preheat oven to 230°C.
- In a large bowl, combine the ground lamb, almond flour, egg, red onion, chopped FOS Kalamata Olives, garlic powder, salt, pepper, thyme, oregano, cumin, and fresh dill. Mix well.
- Using your hands, roll the meatball mixture into 12-13 equal-sized balls, and place on baking sheet.
- Bake for 16 minutes, flipping halfway through. Remove meatballs from the oven and set aside.
- To assemble the gyros, add chopped romaine lettuce, tomatoes, cucumber, red onions, and meatballs into pita bread, and add a dollop of tzatziki
