Greek Gyro Pita Recipe using FOS Greek Kalamata Olives

Ingredients:
  • For the meatballs:

    • 1/3 cup FOS Kalamata olives, chopped
    • 450g ground lamb
    • 1/4 cup almond flour
    • 1 egg
    • 1/3 cup red onion
    • 1 teaspoon garlic powder
    • 1 teaspoon sea salt
    • 1 teaspoon pepper
    • 1/2 teaspoon thyme
    • 1 teaspoon oregano
    • 1/2 teaspoon cumin
    • 2 tablespoons fresh dill

    For the pitas:

    • Pita breads
    • Tzatziki sauce
    • 2 cups romaine, chopped
    • 1/4 cup tomatoes
    • 1/4 cup red onions
    • 1/4 cup cucumber

Preparation:
  1. Preheat oven to 230°C.
  2. In a large bowl, combine the ground lamb, almond flour, egg, red onion, chopped FOS Kalamata Olives, garlic powder, salt, pepper, thyme, oregano, cumin, and fresh dill. Mix well.
  3. Using your hands, roll the meatball mixture into 12-13 equal-sized balls, and place on baking sheet.
  4. Bake for 16 minutes, flipping halfway through. Remove meatballs from the oven and set aside.
  5. To assemble the gyros, add chopped romaine lettuce, tomatoes, cucumber, red onions, and meatballs into pita bread, and add a dollop of tzatziki
